Vegan pulled BBQ Jackfruit Sandwich topped with home-made bbq sauce and slaw. Served with homemade potato salad.
I didn’t really follow any recipes for any of this.
For the jackfruit I cooked it along with onion in a skillet I added black pepper, garlic powder, paprika, cayenne pepper, tamari and maple syrup.
We both thought it was pretty good.

We both thought these were good. Nova ate hers as a sandwich. Easy to make. Requires the use of a food processor which I tend to shy away from I suppose because it’s just more clean up.

Ingredients
1 package Beyond Meat Beyond Beef crumbles
2 cups uncooked brown rice
1 small onion chopped
1 bell pepper chopped (I used half a green and half of a red)
3-4 celery stalks chopped
1 jalapeno sliced
2 cloves minced garlic
Directions
Cook rice however you normally would
Brown the meat crumbles
Add veggies and continue cooking until veggies soften up
Add in cooked rice
Salt & Pepper to taste
We both thought this was really good. I used Pad Thai noodles and eliminated the ginger.
