Eggplant Bacon

BLT with eggplant “bacon”.

Ingredients
1 eggplant sliced into thin strips
4 TBSP Tamari or Soy sauce
4 TBSP oil
2 tsp liquid smoke
2 tsp maple syrup
2 tsp paprika

Directions
Preheat oven to 350.
Mix all the marinade ingredients together in shallow dish.
Dip egg plant slices in marinade.
Place eggplant on baking sheet and bake in oven at 350 for about 40-50 minutes flipping halfway through.

I burnt it but it was still good.

Fishless Tacos

I tossed hearts of palm in a little oil along with crushed seaweed (snacks), cumin, garlic and onion powders. I then heated/browned them in the skillet.
Served on a flour tortilla and topped with a Vegenaise and Valentina sauce mix and chopped lettuce and onion.
Baked tortilla chips and potato/carrot queso on the side.

Farro With Veggies

Our first time having Farro. We both liked it.

Ingredients
1 cup Farro
3 cups water
12 oz or so mushrooms (I used a mix)
6 or so cloves of garlic minced
Handful of chopped peppers of choice
A bunch of baby spinach

Directions
Bring water and farro to a boil and then simmer till liquid is gone.
Sautee the mushrooms, peppers and garlic.
Mix all together along with spinach.
Eat.

A Trio Of Taco Types

For taco tuesday I made 3 different tacos. All served on flour “street” sized shells.

Roasted crunchy chickpea tacos with fresh radish and Valentina hot sauce. Seasoned and sauteed heart of palm tacos with cabbage and spicy #vegenaise. Seasoned and sauteed radish tacos with grilled onion and #herdezsalsa.

Green Tomato Curry

A friend gave us a few green tomatoes and an assortment of green peppers. I wasn’t sure what to do with the tomatoes and decided to try them in a curry.

I diced the tomatoes, chopped the peppers and cooked in a pan along with red onion. I then added a can of chickpeas, a can of coconut milk and a Tbsp of curry powder and dried basil. Was really good.

Vegan Eggs

Ingredients
1/2 block of extra firm tofu (7oz)
1/2 cup aquafaba
1 Tbsp nutritional yeast
1 tsp turmeric
Salt & pepper to taste

Directions
Blend all the ingredients except for s&p.
In a skillet with a little oil, cook covered over medium heat for a of couple minutes.
Remove lid and scramble til firm (approx 10 minutes).

Vegan breakfast burrito with scrambled tofu, sausage and fried potatoes.
