The first one I placed the filling (green onion, sauteed red bell pepper and mushrooms) atop the omelet and folded over. The second one I mixed the filling in the batter. They were pretty good especially when topped with salsa. Recipe here.

Mushroom Gravy Over Toast
Wanting something different than usual I made this for breakfast this morning.
Ingredients:
Diced mushrooms
1 cup non-dairy milk
3 tablespoons whole wheat flour
2 tablespoons extra-virgin olive oil
¼ teaspoon sea salt
¼ teaspoon pepper
¼ teaspoon sage
Directions:
Saute mushrooms in pan.
In a saucepan whisk all other ingredients together and cook over medium heat. Continue to whisk until the gravy has just started to boil and thickens up. Stir in mushrooms.
Serve over whole grain toast.
Notes: Makes enough for about 3 pieces of toast.
Vegan French Toast
I made this no egg, no dairy French Toast this morning. A lot better than I was expecting. I halved the recipe and it made enough for 2 pieces of toast. I used an acient grain bread.

Vegan Cinnamon Toast
Almond Butter Chocolate Chip Baked Oatmeal

Ingredients:
1 onion, chopped
8 ounces mushrooms, sliced and chopped
2 tomatoes, chopped
1 pound firm tofu, drained, pressed with a cloth, and mashed
1 teaspoon turmeric
1/2 teaspoon cumin
1 jalapeno chopped with or without seeds.
4 corn tortillas cut into 1 inch strips and then halved
Directions:
In a sprayed skillet on medium heat toast the tortilla strips till they firm up then set them aside.
Next sauté the onion with a little water or low sodium vegetable broth until translucent.
Add mushrooms, jalapeno and tomatoes. Cook for 7 minutes or until most of their juices have been cooked away.
Add tofu, turmeric, cumin and tortillas squares. Cook for a few minutes, or until mixture is warmed through.
Served topped with salsa and refried beans and corn tortillas on the side.
Banana Walnut Muffins

Ingredients:
3 ripe bananas
1/4 cup oil
1 cup raw sugar
2 cups whole wheat flour
1 tsp salt
1 tsp baking soda
1 cup chopped walnuts
Directions:
Preheat oven to 360.
In a large bowl mash the bananas until soft.
Add the oil, sugar and mix together.
In another bowl mix the flour, salt, and baking soda.
Combine and mix with banana mixture.
Stir in walnuts.
Line muffin pans and fill 2/3 full with batter.
Bake for about 25 minutes.

Plant-Based Pancakes
Notes: We both really liked these. I normally burn pancakes but I think these came out as near as perfect as I”m going to make a pancake.
Ingredients:
1 cup flour (all-purpose or whole wheat)
1 teaspoon sugar
1 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
1 tablespoon ground flax seed
1 cup + 1 tablespoon non-dairy milk
1 teaspoon apple cider vinegar
1 tablespoon coconut oil
Directions:
In a medium mixing bowl, add the dry ingredients (flour, sugar, baking powder, baking soda, salt) and stir together.
In a separate bowl, add the non-dairy milk and apple cider vinegar to create buttermilk. Then add one tablespoon melted coconut oil and finally the flax egg. Mix the wet ingredients.
Now, carefully mix the two together without stressing the batter. To do this, form a “crater” in the middle of the dry ingredients, then pour the wet ingredients (as shown) into the crater. Slowly stir until most of the batter is incorporated. A few small lumps are your friend, too much mixing is not.
Warm the pan over medium-high heat for 3-5 minutes. Then, use a paper towel to spread a little vegetable oil over the bottom of the pan. Test the temperature by cooking one small pancake first. If it sizzles when it hits the pan and forms bubbles after 1-2 minutes without burning, your temperatures are right.
Use a 1/4 cup measurement to create the perfect 4-inch pancakes. If your pan is large enough, you can cook 2-3 at a time. Again, wait 2 minutes for large bubbles to form on the surface, then flip and cook for another 90 seconds. Store the first batches in a warm oven while you finish the rest. Then, top with blueberries, maple syrup, chocolate, peanut butter, coconut whipped cream, or whatever you love on pancakes.
