Mom, Dad and Tara came over for lunch on Christmas day. I made a Tofurkey ham, mashed potatoes, mushroom gravy, roasted Brussels sprouts and corn which I forgot to serve. Nova made green bean casserole and Mom made roasted butternut squash.

Roasted Rutabaga And Black Bean Tacos
I cubed, seasoned and then roasted the rutabaga at 400 for 20-30 minutes then mixed with black beans.
Instantpot Rice And Beans
Ingredients
- 1 cup dried beans
- 1 cup rice
- 2.5 cups water
Directions
- Rinse rice and beans and place them along with the water in the Instantpot.
- Set Instantpot to manual for 25 minutes.
- Do a 10 minute release.
Ethan’s 18th Birthday Visit
The family flew Ethan to Kansas to celebrate his upcoming 18th birthday. Tara took him to a concert in Kansas City and then he spent the day with us and Great Grandma & Grandpa eating pizza and carving pumpkins.

Instant Pot Mexican Rice
Ingredients
- 1 cup Basmati rice
- 1 cup water
- 1/4 onion diced
- 1/4 cup carrot diced small
- 1/4 cup tomato sauce
- garlic powder
- chile powder
- salt & pepper
- Oil
Directions
- Rinse rice
- Turn Instantpot to saute.
- Add enough oil so rice doesn’t stick.
- Add rice and saute for about 5 minutes
- Add the rest of the ingredients
- Set Instantpot to manual for 4 minutes
- Do a manual release after 10 minutes

While the Grandkids are visiting this summer we took them and their Mother to Kansas City for a few days.

Impossible Burger
Finally got to try the Impossible Burger which we got at a local butcher shop of all places. We both thought it was really good. I liked it better than the Beyond Burger but Nova prefers the Beyond Burger.
